FRIED OYSTER FRITTERS
1 pint oysters
1 egg
1/2 tsp. baking soda
1/2 tsp. salt
Dash of pepper
1/3 cup oyster juice
2/3 cup flour

Mix all ingredients except flour. Then gradually add flour until oysters stick together. Use a 1/2 cup measure to dip out
fritters into frying pan. Fry slowly in 1" or more of hot oil until crispy and brown.

CLAW CAKES
1 can Claw Crabmeat
1 egg
1 tsp. baking powder
1/3 cup flour
Mix together all ingredients; using just enough flour to hold mixture together. Spoon
a heaping tablespoon into frying pan with hot oil. Flatten the mixture, using the back of the spoon, to make the claw cake thin and crispy. Fry on both sides.

HOT CRAB DIP
1 lb. crabmeat
1 8oz. pkg. cream cheese
6 oz. grated swiss cheese
1/2 cup light cream
1/4 cup sherry
salt and pepper

Combine; then cook all ingredients in a double-boiler until smooth and creamy. Pour into a baking dish or individual ramekins and bake at 350* for 20-30 minutes until bubbly.
Serve with toasted bread or crackers.
